Instructions
- Heat the Base: In a saucepan over medium heat, combine the heavy cream, milk, half of the sugar, and salt. Heat until warm but not boiling.
- Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks with the remaining sugar until pale and slightly thickened.
- Temper the Eggs: Slowly pour a small amount of the warm milk mixture into the egg yolks while whisking constantly. Gradually add more until the egg mixture is warmed.
- Cook the Custard: Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 170°F or 77°C).
- Strain & Cool: Strain the custard through a fine-mesh sieve into a bowl. Stir in the vanilla extract and let it cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Churn the Ice Cream: Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions (usually 20-25 minutes).
- Freeze & Serve: Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to firm up. Serve and enjoy!
